An all-star hospitality team is creating a popup bar in Sydney that’s influenced by the ’90s
Next month, the team behind About Time will be taking residence in the CBD’s heart, giving new meaning to the phrase “here for fun, not for long”, a year-long popup bar with a nostalgic 90s feel.
The seven owners are known for their hospitality skills. They include Naomi Palmer and Ben Hickey (owners at The Roosevelt), Steve Davis (venue manager at Opera Bar), Tom Price at The Baxter Inn), Jono Car (ex-group manager at Liquid and Larder), Paul Oscar (ambassador at Stone & Wood), and Shannon Ponsford (importer of wine). They are playing to their strengths and offering a wide and thoughtful selection of cocktails, tinnies and a rotating wine collection, as well as some exceptional eats such as spit-roasted lamb rolls, French onion dip with Jatz, and an extensive and carefully considered menu.
In keeping with the 90s theme, there will be a Viennetta dessert and a pavlova-inspired punch. The best thing about the venue is enjoying your drink until 1 is from an outdoor dining area. Summer lamb roll!
We will lose a few of Sydney’s favourite venues when the Sydney Metro infrastructure takes over Hunter Street and Bligh Streets in late 2022. So, before that, the About Time gang decided to have a good time and live life up.
