Ricardo honed his craft at Michelin starred restaurants, including Martin Berasategui in San Sebastian, Spain; Sergi Arola Gastro, Madrid, Spain and The Yeatman, Vila Nova de Gaia, Portugal. Ricardo creates fresh and high quality produce-driven menus at Altitude, which pay homage to the best seasonal Australian produce of the day. Following a biodynamic principle, his creations engage natural flavour by ensuring the garnishes on the plate are linked to the life cycle of the main proteins on the menu.
